Avocado & Sprouts Crostini

Staying healthy can be challenging. One way I have to make sure I always eat healthy meals is by combining them with rich spices and strong flavors.

One of my favorite power foods has to be sprouts. I love to use onion sprouts for this recipe as they go well with the avocado and the feta, but feel free to use radish sprouts, alfalfa sprouts or any sprouts you have available. Sprouts are a highly nutritious food and a good source of protein and vitamin C, so I try to use them as much as I can when I cook.

This crostino rounds up the flavours of  my favorite super foods like avocado (healthy fats), chili (antioxidants), garlic (good for high blood pressure), and sprouts. I top it with feat cheese because a little cheese never hurt nobody. If you are into healthy foods that do not miss on the taste, this is a crostino you need to try.

Avocado & Sprouts Crostini

Ingredients

  • 1 avocado
  • ½ lemon
  • 2 tablespoons crumbled feta cheese
  • 100 gr. sprouts
  • 1 teaspoon of a chili thinly sliced
  • 1 garlic clove thinly sliced
  • Freshly ground pepper
  • Salt
  • Olive oil
  • 1 baguette or other crusty bread

Preparation

Pit and peel the avocado. Squeeze lemon juice, add a pinch of salt and pepper and mash all together with a fork. Mix and set aside.

Add a drizzle of olive oil and a small pinch of salt and pepper to the sprouts.

Add 1 tablespoon olive oil to a grill pan on medium high heat. Add sliced garlic and fry on both sides until golden. Remove of the heat and put the garlic chips on paper towel so it absorbs the extra oil. Do not discard the oil left in the pan. In the same pan, add the bread slices and grill on both sides Once golden all over, remove from the heat.

Assembly

Add one tablespoon of the avocado mixture to the toasted bread. Add a few crumbs of feta cheese on top of the avocado. Finish with a few sprouts, a slice of chili and the garlic chip.
